New cabin dining concepts launched, along with Michelin-starred and local institution partnerships led for all classes. Plus successful reactivation of catering stations and lounges post COVID. Result: improved Skytrax ranking and CSAT/NPS

A single-aisle operator, back-catering all flights from one base.
We redesigned Economy, introduced a Food Philosophy Manual, and ran time-and-motion studies, ending with a hot meal for every passenger in Europe and additional seat revenue.

Full onboard redesign, mystery flights, VOC analysis, and root-cause work that reallocated the existing catering budget toward the moments that actually drove NPS. This served as the base for development of new equipment, and a catering structure.

I have spent most of my adult life in motion, Greece, the UK, Brunei, Kazakhstan, Hong Kong, and long-engagement projects across Europe, the Americas, and the Middle East.Long enough in each place to understand how people eat, how they gather, and what hospitality means there.I believe the best inflight experience is one that understands its passenger not through demographics or cabin class, but as a person carrying a specific cultural memory of what good food and good service feel like.Getting that right requires more than operational expertise. It requires genuine interest in the world.Academically, I hold degrees across hotel management, leadership, and Anthropology of Food at SOAS, that last one shapes everything.I have also completed the FT Non-Executive Director Diploma, because the best consultants understand the boardroom, not just the galley.I founded Hôte Advisory because the best work in this industry happens when strategic thinking and operational understanding sit in the same room, and ideally, in the same person.Based in the UK.
